What is the difference between animation schemes and custom animation

Jim, To add what Ute already said, animation schemes are only applied to standard placeholders like the title and subtitle placeholder or the object placeholder not to individual objects like pictures or even textboxes you made with the textbox tool. If you apply an animation scheme to all the slides, the animations are applied in the master of your presentation. You will see that they are grey and have no numbers in the custom animation task pane. You can copy them to your slide though when you click the arrow next to the effect and choose copy to not sure about the wording as I have the Dutch version here.

If on the other hand you apply an animation scheme to selected slides the animation effects will be applied directly and they are immediately editable in the custom animation task pane. There are rarely questions about animation schemes, not many people use them apparently. Or am I wrong, it would be interesting to hear from the regulars here what they think about it.
